hv tried these korea chestnuts long ago
yet the memory is blurred
btw never hv recorded it
this time.. try them out again
...
taste test result is.. most of them quite rotten
n juz no fresh
though most flesh is still gd starchy sweet
n yet need much effort to bite away browning rot
half rot half edible.. no gd munching time..

prep 5 bags of chestnuts
each weighted 500g
hv already chosen the latest packed batch
n yet still no so fresh
some of the nuts hv grown moldy inside bag
still.. expected most to be gd fresh enough
a bag picked almost a week earlier
store at kitchen.. n some nuts hv sprouted greatly
never hv these.. coz unsure if sprouted is edible..
anyways.. got some latter picked batch.. older ones juz a lesson on storage method
rinsing the chestnuts
even though it's a newer fresher batch.. still got some started sprouting ones
got two pieces picked out
wif a hole on shell
will not hv time to munch on 5 bags anyways
juz start cooking
count after last piece dumped in.. set 25 mins
hv one random piece to check its doneness
almost all of the them the flesh is stuck to the skin beneath shell
break it open by the cut
looks soft starchy enough
bite into
juz starchy like the other chestnuts
taste of a classic chestnut sweetness
it's ok for the flesh at centre
n yet harden browning rot flesh at shell
n that's quite a thick layer
btw.. flesh juz stuck onto the skin at shell
though wif a cut that's deep enough
only the hard shell is ok easy open up
but the softer skin is hard to peel off clean
got some part of the skin able to peel off clean
taste fermenting sour
texture somehow still a bit starchy
n yet like most rotten veg.. getting soggy mushy.. juz not a firm starchy one..
got another rot piece
so far
the best fresh sweet chestnut
flesh looks gd bright yellow
n without any browning
gd moist sweetness
n not dry or mushy
however.. still some harden sticky bites at skin
it's a big black rot in the middle of the nut
wonder where it started to develop?
the other half of the flesh.. n which is in light yellow colour.. is still starchy gd edible

now that I know browning n hardened flesh means rotting...
chestnuts comes in three different shapes
from left to right: both sides flat, one side flat one side round, both sides round
...
taste n texture I dun think there's difference
but likely round nuts will be more fleshy
some pieces got two separate cloves of flesh
separated by the soft skin
