mango, thai 2019may30-31

Thailand mangoes
this post is a record of nam dok mai

*entry x2
*variety x1

notes...
~ nam dok mai ripe never got oily skin..
~ should always with a flowery tone
~ flesh smooth n creamy even unripe
~ flesh is not easily infected by skin rot
likely quite resistant to rot protected by skin
~ stem end rot is the most affecting on flesh quality

#1

first open up this black one
dunno why it's not ripen properly...
stem still intact...
no bruises...

 knife down is hard
especially the black skin part...
under skin flesh is not black...
yet the flesh is kinda like blocked by black hard skin...
never ripen...
smells sour unripe...

though flesh is pale yellow n sour
its juicy soft n smooth...
n the sourness is special with the unique fragrance of nam dok mai...
kinda like it lol...

 still finished most...
notice some seed rot on the tip...

#2

a little black shade rots like the first one
wanna find out how bad it is...
btw it's got a very cute curvy shape...

knife down is softer but still a bit firm...
same juicy inside...
a bit more deeper yellow...
but by its smell likely still underripe...
noted that the most yellow area in pic is bruises

 take a bite down
it's with more ripe flesh on the outside...
much less sour...
yet not sweet throughout...
flesh is more tangy towards the seed...
same creamy juicy...

 a curvy seed left...

#3

grey shaded skin comes together with some black dots甜點...
will it be more ripe?
still quite firm to the touch...
expect to be same like the first one...
especially given that its even larger...
would be less easy to get ripe...

similar light yellow colour...
similar juicy...
yet smell sweeter...

 thicker rot on black skin...

 as expected...
harder to ripe through...
more pale yellow at the inner flesh...
again sour yet juicy creamy...
juz the same case ...

stem end rot at seed is of purple hue...
a bit strange...
btw this seed is starting to sprout...
got split open on the side...
likely a sign of too early harvested...

three pieces side by side, colour comparison...
the left most one looks deeper yellow in colour
likely more ripe...

#4

 got many 甜點
soft to the touch with some bruises...
smells sweet n fragrant...

 knife down is smooth...
can tell it's a soft ripe flesh throughout...
got much juice falling out...

 perfectly ripe...
juz to the right sweetness...
with a bit of tangy...
with its distinctive flavour... hint of flowery tone...
consistent sweet flesh the whole piece...
n as always super creamy juicy...

found a rot at a bite...
maybe insect bite?

left on seed is the single incident of rot...

#5

looks the most ripe so far
btw its smaller in size easier to get ripe...

 (2pics above)
sugary sweet
without any nam dok mai flavour left...
sweet like pudding...
gooey juicy flesh with a translucent inner flesh...

so ripe that seed start to rot...

#6
 very soft to touch
but likely caused by bruises...
still smell fragrant n sweet though...

 by knife sliding through
soft n smooth...
should be a ripe one...
opening up looks good smells good
likely juz another perfect ripe piece??

however bite into the flesh is a two tone one...
inner flesh is pale yellow sour...
n got some strange air pockets...
maybe diseased???

left with some flesh on the seed...
juz strange that didn't finish it clean...
somehow not ripen properly...
n even a bit diseased...

this batch of mangoes are in strange conditions
most are not ripening properly...
maybe too early harvest?
maybe its juz a bad seed since its grown?

anyways juz not good as my past experience with nam dok mai...

 funny mislabeling...
got one labeled as rainbow mango lol...
juz so confirmed that I recognized the distinctive shape of nam dok mai...

#1

 one side got bruised...
turned grey shaded already...
one side got a blotch...

 knife down smooth n soft...
open up its golden yellow
smell sweet enough...
soft n ripe thus easily got bruises as seen when skin removed...

 except the bruised part
the whole one is ripe....
juz to the right stage...
still got the flowery tone...

 as usual
inner flesh is more pale...
last bites at seed maybe a bit sour...
still finished the seed clean...
notice its starting to sprout already...
likely being picked too early...

#2

got more black little dots 甜點
n even a bigger black spot
maybe grown with the sweetness...
soft n thus much bruises...
stem less green...

 knife down similar soft...
colour n smell n juicy same same...

flesh are all deep golden yellow...
more gooey more sweet n ripe...

a spot that got bruised gone so deep...

perfectly ripe one with clean seed left lol...

#3

relatively smaller one within this batch
with much black dots 甜點
yet its fat n chubby...
soft to the touch like others...
got a size comparison with a large piece...

knife down same smooth n soft...
golden yellow n smells sweet..
when open up skin is super juicy
got sweet nectar oozing out...

 a totally ripe one
though not so deep in colour...
so sweet already...
got a unique sweetness that's like fruit punch...
as its thicker its more fleshy...
combine with the juiciness it's so good...

 strange thin seed lol...
super good a piece with much succulent flesh
every bite is flavourful sweet n juicy...
best one to have...

 three more pieces...
all thicker n larger...
lets have the last three from left to right
according to sizes...

#4

juz nothing to say... juz some pics...
good as the third one...
sweet smooth creamy juicy flesh
so perfect except the bruises...

#5

change decision to have the right one first...
juz notice it's got a paler skin...

knife down same smooth n soft...
looks very golden...
with juice falling out...
likely ripe n sweet...

got a big bruise on one side
coz its softness...
juz that the bruise has not turned grey yet...

though looks great on the outer flesh
inconsistent flesh towards the seed...
maybe coz large in size
thus hard to ripe through...
inner flesh is pale yellow n a bit sour...
...
also got some rot at seed dunno where it started the rot at seed is some browning
associated with sour flesh got air pockets...

#6

super ripe a piece...
soft to the touch... got sweet fragrance...
notice it's got sweet nectar coming out at stem...
all flesh orange yellow...
juz sweet like candy
looks n taste like mango pudding again...
sorry that would have lost flowery hint...
prefer nam dok mai thats not overripe though...

all seeds left... so much wanted to plant them...
though I dun have space for gardening...

overall nam dok mai is my dearest mango
love that unique floral flavour
not juz pure sweet...
yet still got chance to meet some poor grown
or maybe juz improperly ripened ones...
...
the best to do is give patience...
care for them since they're rock hard
n wait for the perfect moment to enjoy
this gorgeous mango is heavenly good
juz worth to pay some time n effort on...
