a strange poor batch of nam dok mai
details recorded
for ref
remarks...
nam dok mai are generally soft
smell n colour should be better indicator of ripe
should
1, smell sweet n fragrant
2, not 肉色
or else maybe not ripened best
not of best taste
--------------------------------------------------------------------------
mango, nam dok mai
Thailand
@20190603
three pieces in comparison
same soft to touch
goes in the order according to the skin colour
#1
at this level of grey bruise the rot is not deep inside
juicy n soft
but flesh are are not sweet throughout
seed a bit brown n rot
juz cant ripen perfectly...
#2
another piece of rot n bruise
but likely not ripened properly?
or maybe not enough time on tree?
smell not sweet n fragrant
a larger piece more firm...
bruised skin likely hinder its ripening
stem end rot looks this
for skin rot
not affecting all flesh
other flesh remain good n juicy
yet not a sweet n fragrant taste
seed start to rot
likely developed from the stem end
growing strange mushy flesh on seed
flesh texture still smooth n creamy n juicy
yet the taste is sour inner seed
even the outer flesh will be a sweetnes that feels unnatural unfresh
strange forming rot piece
seed that left looks like this
air pockets
tangy flesh
mushy flesh
3rd & 4th piece side by side
colour difference
left one first
coz paler
#3
skin with a little bruise
open up reveal this colour the tot is not oxidized grey yet
looks with thick fibre
not yet ripe n become fine the flesh
a little browning on stem end
pale yellow n tangy flesh
yet it's super juicy n creamy as always
tangy flesh in big proportions
abt half are yogurty sour...
a bit browning on seed
#4
by skin color n sweet aroma
likely a perfect ripe piece...
skin off is smooth fine golden yellow
different colour of stem end brown
not 瘀黑
still same half pale yellow
n seed tot start from stem end...
same creamy juicy flesh
this one the unaffected flesh is sweeter
more natural sweet
seed left with some yogurty flesh unfinished
wonder if rot start from inside out when its grown?
or from the stem end?
two pieces
size n colour comparison
try small first
the largest one maybe more juicy fleshy
#5
skin free of rot or bruise
not much 甜點
...
knife down its the softest feel
super juicy look when skin off
smel sweet n fragrant
likely very good
...
still browning on stem end
affected deep into the seed
yet more flesh golden yellow
taste sweeter overall
same creamy n juicy as always
leftover seed
all rot n black
maybe coz overripe?
becomes translucent the flesh?
#6
largest one
bruised on both side
under skin bruises looks a bit grayish...
except little bruises
all flesh is looking good
again juicy n creamy
sweet without refreshing flowery tone though
seed a bit browning
this one got flesh smooth n sweet like mango pudding
with pale yellow n sour flesh at last bites
juz think it's overripe but also cant be properly ripened throughout
this round of nam dok mai are strange n no good
all are either not ripen but start to rot...
or are half overripe half tangy grey
not the good nam dok mai I used to have...
