have been planning to try this fruit
surely promised to be a must try this summer
have been checking out them a long while
since April when it started prevailing
now it's about a month of studying...
hope to have a good result in mid term test...

=====fruit haul=====
got two varieties this time
1. 金枕頭 from thailand
2. 干腰 from Vietnam
fruits are chosen from aeon n pkshop
those from aeon are removed flesh, stored in fridge...
while from pkshop are stored at room temp, some in shell some are boxed...
=====time to dig in=====
first taste 金枕頭
coz expected it to be milder tasting
suggested by various web info

smell a bit strange
maybe some smell caught from the fridge
maybe somehow affected by jackfruit nearby
looks a bit watery n unfresh
paler as well
its double wrapped with cling wrapper...
looks well protected...
opening up looks like this...
juz a bit bruised
not plump n good looking...
also some dark shade flesh on the right box...
the side underneath got watery n translucent...
bite open is soft n gooey
surprise me it's got a membrane on the surface
inside its sweet like cheese mousse
hard to describe this experience
juz that durian is not that smelly as told...
it's got fibres within flesh but are fine fibres
the seed is easily detached from the flesh...
first time learned that its fibrous flesh is only attached to one side of the seed
the case is like some single seed fruits
btw the seed got a bit defects...
another piece of flesh that's got translucent rotting flesh near seed...
a bit mushy strange
taste a bit off
should bite away that part
a seed that is soft enough that I accidentally bite it broken...
picking up some pieces looks very translucent
likely gone bad 出水
not to have it...
proceed to the next box...
choose to try the largest clove...
looks dry n with a black line on top
n again translucent on the bottom
feel same soft to the touch...
the black line is some black hard fibres
somehow like black fibres in bananas...
wonder if its rot or still ok...
anyway juz bite away that part...
flesh on the top side got ssme taste n texture...
most are gooey tasty flesh...
except the side sitting on tray becomes translucent n watery...
with a clean seed as no flesh stuck on...
the adjacent piece of the same clove
same clean seed with creamy flesh easily bite off
have most of the flesh except the watery part...
that's all... finished from the fridge version...
think better reserve for the in shell instead...
so far...
they are sweet n gooey creamy
my kind of dessert texture
liked it...
juz not that fresh looking
maybe juz that I m not knowing it well?
juz not sure if this is the right ripeness?
but the soft solid part is telling me ok...
n the watery look is telling me sth gone bad...
still...
lots of questions while at each bite...
btw they are less oily than avocado...
after picking them wif hands left no oily on skin
quite surprising...

see if this is more pungent or not...
then to decide which to have first...

also looks drier on this room temp piece...
same softness when picking up...
underneath not look water clotted...
texture same gooey creamy
with that membrane n fibre strands
but taste more flavourful
a bit savory like meat
with a hint of wine bitterness
notice the seed is way bigger relatively...
same portion got two seed...
btw seems flesh near seed is watery translucent...
similar on the other half
juz that it got some white thing attached
dun know if that's edible?
juz so large a seed omg...
干腰 seems to be a stronger flavoured one...

maybe it's somehow smell sweeter than 干
btw can camera tells that its pressed into a flat piece ... lol..
as it was in the shell
got no watery signs
flavour is more natural when torn off a piece
yet seems less ripe...
less sweet n gooey...
n the seed looks like going rot?
then the other half of the same row
looks a bit water clotted on this side?
by feeling the softness
its likely half ripe n half unripe again...

with this last end feeling the most firm

likely more ripe
why is it the exposed side is less ripe?
given that it should be more exposed to room temp
an even more odd looking seed...
until seeing this seed...
more confirmed that those defects are rot seeds...

have the lighter colour first
expected to be less ripe less flavourful...
open up same flavourful
like chinese燒肉 lol...
super soft n gooey when picked up...
taste ripe n rich already...
always more intense than 金枕頭...
same with the first 干腰
relatively large seed
though seed size is similar to 金枕
got five seeds in a clove...
that's a higher ratio...
by now pretty full
still try this super deep colour one...
looks n feel dry on surface when touch...
same soft to the touch...
notice the membrane is like drying up
likely flesh moisture is lost...
picking up can see its 出水
maybe that's the moisture loss resulting in the shaggy membrane?
smells n taste not much difference
savoury n flavourful...
towards the seed is translucent
fermented n a bit bitter like wine...
juz gone off... much is trashed...
lastly take a look at this large clove
same looks drying up on the surface side
looks wrinkled
touching feels more firm...
pick up a piece...
its gooey watery underneath...
again gone bad...
smells sweeter but less savory this time...
try to take a bite...
it's of paler flesh...
more fibrous...
likely a less ripe one...
though it would be hard to judge by its golden yellow surface...

durian is a gooey dessert like fruit that I like!
its creamy texture is juz better n less heavy than those regular mousse n cream desserts...
as of the difference of 金枕頭 n 干腰
think they are similar being the same fruit...
if at its peak ripeness they all got the creamy rich flesh...
major differences noticed are...
1. seed sizes
金枕頭 clearly got more creamy flesh n a relatively small seed
干腰 is a variety with a larger seed surrounding with less flesh
2. flesh colour n texture
金枕頭 got paler colour flesh
n the flesh is finer more gooey
干腰 got a much more brighter more golden yellow flesh
a bit more fibrous with more firm body...
3. flavour intensity
金枕頭 is more mildly sweet...
a bit like sweet cream cheese...
干腰 surely smells more intense
taste is way more concentrated
somehow a bit savoury n meat-like...
thinking... its juz up to u to decide if it's worth it to have deeper flavour in exchange with larger seed...
coz some would like 干腰for more intense flavour... however it's got relatively less seed...
meantime...
some would like 金枕頭 for big bites of flesh... yet its mild flavour may not be satisfying...
n that's why ppl keep developing new hybrids...
juz to get the best of both lol...
looking forward to try durian again...
